Russia's consumption of fish and seafood is not the first place, although our country is well provided with fish resources. It is enough to consume fish at least twice a week.

You can cook a variety of dishes from fish: cutlets, salads, jellies or just bake it in its natural form. I want to share with the readers the most simple and delicious recipes.

1. Red fish with mustard sauce.

To prepare this dish you can useany red fish: pink salmon, salmon. I'll cook it from pink salmon. So, for cooking, we need a single fish without a head, if it is unbroken - to gut and rinse from the inside. For mustard sauce you need: mustard (I use the prepared pasta, two teaspoons is enough), two yolks from fresh chicken eggs (preferably home, they have saturated color, the sauce turns bright yellow), juice of one lemon, olive oil, salt, spices at will and taste, 50 ml of cold boiled water, 100 grams of butter and greens for decorating fish dishes.

First, we divide the cleared fish into batchpieces, I had a big fish - it turned out 5 pieces, about 3 cm thick. Rub it with salt, squeeze a little lemon juice from the top and leave for marinade for half an hour. We put it in a mold and bake it in a preheated oven.

While the pink salmon is baked, prepare the sauce. In a saucepan pour water, put on a slow fire, add yolks and butter. All this is intensely thwarted by a whisk. When the butter melts, add the mustard and squeeze the remaining juice from the lemon. Then sauce the salt, add the spices and stir for a couple of minutes. The sauce is ready.

We put the hot fish on a plate, water it with plenty of sauce and decorate with greens. The dish is ready. Similarly, it is possible to cook fish dishes, it turns out not less delicious.

2. Fish cutlets.

This dish always helps me out when there is no meat,but still want a cutlet. For cooking, we need 800 grams of any fish fillet (I usually use salmon fillets, but once tried the fillet of pike perch, it's also very tasty), 1 egg, a piece of white fresh bread or a loaf, greens, salt, a pair of onions, you can use a slice of garlic - it will sharpen. Another little advice: if the fish is lean, it is better to add butter to the fish mince, so the cutlets will turn out juicy and not dry.

We pass through the meat grinder the fish fillets, onions,garlic, loaf and greens. All the salt and mix. Add the softened butter and lightly beaten egg. Again, everything is mixed. Further we form cutlets. I just roll the minced fish into a layer and cut the cutlets with a glass. So they make me equal and the same. Then panning with breadcrumbs and frying on both sides or baking in the oven. For small children fish dishes from pikeperch can be cooked in a double boiler. So in cutlets all useful properties will remain.
