Pastry dough

1. A simple recipe without yeast. For cooking, we need 600 grams of flour (preferably a premium grade), a packet of butter (it can be replaced with margarine, I take cream, because it contains a small amount of butter), fresh kefir 200 ml, half a teaspoon of salt, a batch of baking powder for dough . Oil finely chopped or rubbed through a large grater, mixed with flour, salt, pour baking powder, mix everything. Then add kefir and mix not very steep dough. Then we roll it into a big ball, wrap it in a plastic bag and put it in the refrigerator for half an hour or more. After 30 minutes the pastry dough is ready, you can safely bake them with any stuffing.

2. Kefir dough on yeast. To prepare this test, we need the following ingredients: 500 grams of wheat flour, 50 grams of yeast (you can dry, you can squeeze as you prefer), two cups of kefir (this is approximately 400 ml), 2 eggs, a pinch of salt and sugar, half a cup of butter . Sugar and yeast are bred in kefir. Kefir should not be cold. Then the eggs are ground to a small foam and added to kefir, salt and mix. Then spread the butter, if it is frozen - finely chopped or rubbed on a large grater. All mixed. Then, in small portions, add the sifted flour and knead the dough for pies. If there is not enough flour, we increase the dose. The result should not be too steep dough. Cover it with a napkin and put it in a warm place, so that it increases in volume at least three times. When the dough ripens, you can safely bake pies. Perfectly suitable for pies with potatoes.

3. Pies made of puff pastry are very delicious, but it's harder to prepare and much longer than usual. But still worth a try. So, we need 400 grams of flour, two packets of butter, 200 ml of water, a spoonful of salt. We sift the flour on the table with a slide, in the middle we make a small groove. We pour cold water with salt into it and gently mix it so that the water does not pour out of the groove. We knead a steep dough and put it in the refrigerator for 2 hours. The oil is allowed to soften a little, then slightly roll it out so that the shape resembles a rectangle. We put it away in the refrigerator. Then, when the dough and oil are well congealed, remove it. The dough is rolled in such a way that it resembles the shape of butter in shape, but more than twice. In the middle of the layer we spread oil, we form an envelope with oil inside, we patch the edges. Then spread the seam down on the flour-strewn table. Roll out a long strip, try to roll thinner. Further we add the received layer three times and we keep an hour in the refrigerator. The puff pastry is ready.

But still I advise you to try to bake puff pastry, despite the fact that it is difficult to prepare and takes a lot of time.
